Our factory is outfitted with state-of-the-art automatized machinery, with computerized systems allowing for constant monitoring of the production process and of quality standards. It rests on a 25000 sq.m. area, and is furnished with the most advanced milk standardization, curd measurement, and cheese ripening equipment, in adequately conditioned environments.

In order to avoid potential microbial contamination of products across the stages of our productive process, the factory is divided into different areas by microbiological risk.
Transition from one area to the other occurs in controlled hygienic conditions, by utilizing passage filters and air overpressure in clean zones in relation to zones with potential contamination.
